Mrs O's Egg Free Cake Mix!

Well today came my delivery from Mrs O's and I was very eager to try! I literally opened it up and made a cake when it came through to door! The mix I recieved was the 'Yummy vanilla gluten & egg free'. It was very easy to make, I added Oat milk, rice vinegar, vanilla and vitalite. It literally took minutes to make! I put it in the oven and after 40 mins I had a lovely light sponge! I added some Meridian wild blueberry jam and made an Icing with vitalite and icing sugar. It was a hit! We all loved it! Ambers loaded with cold and this was a lovely 'pick me up' for her! I would definitely recommend these mixes! Check them out Here!

Meridian

i popped into my local Holland and Barrett as I had just got my points card vouchers and I saw this jam, I'm always looking for new things to spread on crackers and put into cakes and biscuits. It's made with only fruit and juice so no added sugar and a big jar is only around £2.50! Amber loves it, it's not too sweet but has a lovely flavour and is a hit in our house! I'm going to try a jam tart recipe with it and will post it later! I'm not a lover of jams but I thought it was really tasty and with no added sugar I'm happy to let Amber munch it on her crackers!

Moo free chocolate

We love Moo Free! Now Amber is 15 month she's looking at what others are eating especially her big brother! We popped to Morrissons and saw they had the bars of Moo Free, we got the plain, honeycomb and mint an Amber LOVES all of them! At Easter we got her some Moo Free eggs and the Orange one is amazing! (Even I have opened one of the eggs!) Ambers eyes go as wide as I've ever seen them even if you pass these on the shelf! Even if she does start the milk ladder I'll still be buying this chocolate! (If not for Amber maybe myself)

little dish Go Gos!


Tried Little Dish's new biscuit Go Go's and Amber loves them! They are small little O's just the right size for her hands and are allergy friendly! They are made with oats and flax and chia seeds so I'm very happy for her to snack on them as much as she likes! (She has a terrible sweet tooth!) we bought a box with 5 packs in and they were around £2 in tesco so I feel they are really affordable too! Inside the box was a free meal voucher too so that was a nice surprise, we got the bolognese alphabet pasta (contains wheat and may contain milk) she wasn't too keen but it was the only one that didn't have milk in the ingredients. (But Amber isn't too keen on tomatoes) all in all we will definitely be buying these little biscuits again!

Sorry I haven't posted lately....

sorry I have neglected my blog lately, been working a lot and we are in the middle of moving house so never seemed to have the time! I will stick up some reviews soon! Amber's doing well at the moment her stomach and eczema seem to have calmed down but she still has her random days! She still can't have eggs, milk or soya but she has been managing with some may contain milk products! We are thinking of starting the milk ladder soon! She's had to reduce her wheat intake to a few portions a week and her stomach seems a lot better! We are hoping this is the start of her being 'normal' again and no more crying in pain!!

Banana muffins


Last night me and Jack made some banana cakes, we used to make these all the time when Amber was really really little but now she wants some I needed to make a dairy/egg free alternative! They came out really really tasty;
200g plain flour
1/2 teaspoon baking powder
1 teaspoon bicarbonate of soda
1/2 teaspoon of salt
2/3 mashed bananas
125g caster sugar
75g melted butter (we used vitalite)
1 linseed egg (made with 1 tablespoon of linseed and 2 1/2 teaspoons of water, pop in fridge for 5 mins)
Splash of milk alternative (we used oat)

Mix the flour, baking powder, bicarbonate, salt and sugar in a bowl.
Mash the banana and add the melted butter and linseed egg in a separate bowl.
Add the dry bowl to the wet bowl then add a splash of milk alternative.
Mix well and add to baking cases (this makes 10)
Cook on gas 5/ electric 170 for 20 minutes

Skin prick tests next week! Finally!!!

Ok so Ambers got her skin prick tests next week for soya, wheat and tomatoes! The paediatrician is also worried she may need a test for celiac disease so.....She's back on wheat for a week! Honestly I'm so confused!! I'm also hoping they may test for eggs again incase she's outgrown them! She's stopped having her formula milk now too as it had hydrolysed cows milk in and we were worried the chronic dihorrea may be from that? We don't know, neither does the doctor or the paediatrician or the dietitian so this is why she's having the tests! I'm dreading what may come up, she's had a bad reaction to soya so I guess she may be off that but we can't guess! So right now she's egg milk soya and tomato free. Let's just hope it gets sorted! She's pretty happy even with the dihorrea but she has lost a little bit of weight.... She had some toast tonight think she thought all her birthdays had come at once! 😃
